This is an amazingly simple recipe with only 5 ingredients and oh so good. The strong nutty flavour makes you wonder if there’s any ‘nuts’ in Nutella at all. My children gave it their thumbs-up.
Recipe ( adapted from Low/ Helen Ho)
- 100g walnuts or almonds
- 70g caster sugar
- 25g varlhona cocoa powder
- 1/4 tsp salt
- 3-4 tsp cooking oil (peanut oil)
Method
Place nuts on a tray line with baking paper and roast till fragrant, about a few minutes in a small toaster. Gauge by smell, slight darkening and emission of oil from walnuts. Be careful not to burnt it or the paste will be slightly bitter.
Blend nuts till fine at Low speed.
Add in other ingredients and mix roughly with a spoon. Now blend at high speed, for few minutes and it will slowly turn to a coarse paste.
Blend some more and paste will become smooth and shiny. Stir with a spoon every now and then. That’s it, store in clean jar and consume quickly.
